Grapefruit Hazelnut Roasted Beets

This simple yet delicious recipe is easy to prepare and healthy to enjoy!

Ingredients:

  • 3-6 Beets (depending on size)
  • 1/2 cup hazelnuts
  • 1 bunch of Dill (or dry dill if necessary)
  • Olive Oil
  • Fresh squeezed grapefruit juice
  • White balsamic (optional)
  • Teaspoon of Salt (to taste)
  • Pepper (to taste)

Preheat oven to 400F.  Prepare a baking sheet with parchment paper.

Skin and dice beets into bite size pieces.  In a bowl, drizzle olive oil and grapefruit juice over the beets and use your hands to coat the beets and spread them thinly over the parchment.

Dice hazelnuts and sprinkle them on top of the beets.

Sprinkle salt, pepper, and dill over the beets and hazelnuts.

Roast beets for 20-30 min or until a fork easily goes into them.

Great served with fresh chevre goat cheese and fresh dill on top!
