Lemon & Thyme Farinata

Farinata, or Fainè, is simply garbanzo bean flour batter with generous olive oil and salt, baked in a very hot oven. The inside is creamy and moist while the edges get nice and crispy. This is a very comforting and satisfying treat that is naturally gluten free, dairy free, and vegan!

Ingredients:

  • 2 cups lukewarm water
  • 1 ½ cups garbanzo flour
  • 4-5 tablespoons olive oil
  • 1 teaspoon kosher sea salt
  • 1 teaspoon minced fresh rosemary or thyme
  • Zest of 1 lemon
  • freshly ground black pepper to taste

Instructions:

Preheat the oven to 500 degrees F (260 degrees C).

Whisk together the lukewarm water and garbanzo flour in a large bowl until smooth. Whisk 3-4 tablespoons olive oil, kosher salt, and herbs into batter until well combined. Let sit for 30 min.

Place a 10 in cast iron skillet or another metal pie pan in the oven until smoking hot. Once hot, pour 1-2 Tablespoons of Olive oil and swirl to coat the bottom of the pan.

Quickly pour batter into the hot oil and close the oven. Bake until cake is browned and crusty, approximately 25 to 30 minutes.

Transfer pancake immediately to a cutting board and cut into wedges. Garnish with freshly ground black pepper and sea salt and serve hot.

Variation: Add thinly sliced onion, fennel, or baby artichokes on top of the batter right before baking, adding a touch of caramelized sweetness!
